These melt in your mouth sweet potatoes are so tender and amazing. A touch of butter and maple syrup adds the perfect trio of flavors.
Serves 2-4
Ingredients
1 pound sweet potatoes
2 Tablespoons salted butter
2 Tablespoons maple syrup
(Optional) Flaky salt, to personal taste
Directions
1. Peel sweet potatoes and cut into 1” thick slices.
2. Place sweet potatoes in a single layer inside vacuum seal bags.
3. Vacuum seal sweet potatoes and then place the bag on a baking sheet pan. Place sheet pan in middle oven rack.
4. Set oven mode to Air Sous Vide. Set temperature to 200°F.
5. Air sous vide for 120 minutes.
6. After timing ends gently press sweet potatoes to test softness. If sweet potatoes are still firm, continue air sous vide for additional 30 minutes or until cooked to your preference.
7. Remove sweet potatoes from the bag.
8. Heat a skillet on medium-high heat. Melt butter in the pan and then place cooked sweet potatoes flat side down.
9. Drizzle maple syrup evenly over sweet potatoes.
10. Sear each side for about 1 minute then flip and sear other side.
11. Add additional salt or maple syrup if desired. Serve warm.
