Artichokes are perfectly cooked with the Air Sous Vide method. It’s great for making a party platter of stuffed artichokes without the mess of boiling.

Ingredients
2 large artichokes
Lemon slices
Yogurt Herb Dip
Directions
1. Trim off about 1” of the tops of the artichokes. Remove about 2 layers of the tougher outside leaves. If needed, trim any thorny tips of the remaining leaves.
2. Cut in half and using a spoon, scoop out inner fuzzy chokes down to the heart.
3. Lay the artichokes halves in a single layer in vacuum seal bags.
4. Vacuum seal and then place the bag on a baking sheet pan. Place sheet pan in middle oven rack.
5. Set oven mode to Air Sous Vide. Set temperature to 200°F.
6. Air sous vide for 180 minutes.
7. Remove artichokes from the bag. Allow artichokes to cool and serve with lemon slices and yogurt herb dip.
