How to Convert a Traditional Recipe to a Steam Convection Oven Recipe

Tips for Converting a Recipe for a Steam Oven:

  • As a general rule of thumb when you're converting a traditional recipe to a steam convection oven recipe it will reduce the cook time by about a quarter. Example: If your recipe says cook for an hour cooking with steam will take about 45 minutes
  • You always want to keep it uncovered as well so that the steam can penetrate the food and cook it more quickly
  • The more dense the food such as a casserole or a turkey the greater reduction in cook time.
  • Steam cooking adds moisture the food maintains more vitamins and minerals in the food as compared to a radiant oven or even boiling water and it perfectly roast meats vegetables and fish
  • If you're unsure about temperature of your food always the meat temperature probe that comes with your oven

Steam Assist

Select models can also use steam assistance for the following convection cooking modes:

  • Bake
  • Roast
  • Convection Bake
  • Convection Roast
  • True Convection
  • Speed Convection

When cooking with steam assistance, steam is introduced into the oven cavity at various intervals and with varying degrees of intensity. This gives you a better cooking result. Your food becomes crispy on the outside and juicy and tender on the inside.

Refer to your owner's manual to learn how to activate a cooking mode with steam assistance for your model.

Steam Programs

Select Thermador ovens come with Steam Programs. Refer to your owner's manual to learn if your oven has this feature and how to activate the programs. If you do not have your owner's manual, you can download it here

With Steam Programs, your steam oven automatically sets the oven to cook different foods. You can select a variety of programs such as vegetables, Poultry, Lamb, Breads, Cereal and Grains, and more.

Refer to your owner's manual for more specific tips about each program.

  • The steam programs help you to use your appliance to prepare different dishes by selecting the optimum settings automatically.
  • You can select a program directly on the appliance or by using the Home Connect® app.
  • For some dishes, you have to enter a weight. The display will show the possible weight range. The appliance will then apply the time and temperature settings for you.
  • The display shows recommendations on cookware, shelf position or the addition of liquid when cooking meat.
  • Some dishes require turning or stirring, during cooking. The display shows a note shortly after operation starts. An audible signal reminds you at the right time.
  • Press INFO to display information on the right cookware and tips for preparing the selected dish. Or view your Owner’s Manual

Note: You cannot pause a steam program. You can cancel it by turning the oven off, but you will have to start from the beginning
