Bake & Convection Bake

Select Thermador Ovens come with the Convection Bake mode. During this mode, heat is circulated throughout the oven by the convection fan. This moving air strips away the natural thermal barriers that surround food and allows the heat to start cooking sooner. It dries the food's outside surface, while the inside remains moist. Convection baking is also faster than the standard Bake mode. We recommend using this mode when baking foods with different layers since it will cook more evenly. This mode is best suited for cooking full oven meals, multiple cake layers, or items like frozen foods (pies, pizza, lasagna, etc.) on 1 or 2 racks.

True Convection

Select Thermador ovens come with the True Convection mode. During this mode, food is cooked by heat from a third element behind the back wall of the oven. The heat is circulated throughout the oven by the convection fan. We recommend using this mode to bake individual baked goods such as cookies and pastries on multiple racks at the same time.

Tips for Convection and True Convection Baking

  • To convert most recipes for baked items such as cookies, cakes, pies, etc., reduce the oven temperature by 25 °F.
  • Always preheat the oven if the recipe recommends to.
  • Use low, shallow, and uncovered bakeware during convection baking. This allows the heated air to circulate around the food.
  • Allow at least 1" to 1 ½" of air space around all sides of the pan.
  • Do not open the oven door during baking to prevent heat loss. Use the oven light to check the doneness of the dish.

Speed Convection

Speed Convection uses all heating elements with the convection fan to evenly distribute heat throughout the oven cavity. This mode is recommended for frozen convenience foods. By cooking with this mode, you can decrease your overall cooking time since preheating is not neccessary. Foods are evenly browned and crisp on the outside. When using Speed Convection in a double oven, only one oven is available at a time.

Tips for Speed Convection

  • Cook all foods in a cold, non-preheated oven. The food will still be done accordingly to the package time.
  • Follow the package instructions for baking time and temperature.
  • Do not bake frozen foods packaged in microwaveable containers.
  • Cook food items on the 4th rack (from the bottom) unless directed otherwise by the food manufacturer.
