Boozy Raspberry Coconut Pops

Boozy Raspberry Coconut Pops blend bright, tangy raspberries with silky coconut and a whisper of rum for a frozen treat that’s both playful and sophisticated. These raspberry coconut pops are easy to make, freezer-friendly, and simple to customize—keep them boozy for backyard happy hour or skip the alcohol for a kid-friendly version—making them perfect for summer entertaining or an everyday cool-down.

Ingredients

10-12 servings:

12 ounces (340g) fresh raspberries

1 1/4 cups (300ml) coconut milk

1/2 cup (120ml) water

1/2 cup (120ml) rum

1/2 cup (100g) sugar

1/2 teaspoon orange bitters

Instructions

Step 1

Soak wooden pop sticks in a glass of warm water for at least 30 minutes.

Step 2

Blend all ingredients until smooth and sugar is dissolved. Allow to settle for a couple minutes and then skim any excess foam from the top of the mixture.

Step 3

Divide mixture between ice pop molds.

Step 4

Insert pop sticks and freeze for 4 hours or until completely solid.
