Melting Sweet Potates

Imagine a sweet potato so tender it practically melts on your fork, with concentrated natural sugars and a quick caramelized finish that tastes like you spent hours in the kitchen. Thermador’s Air Sous Vide delivers that level of control—gentle, even heat locks in moisture and intensifies flavor while you prep the rest of your meal. The result is a versatile side that’s perfect for family dinners, holiday spreads, or make-ahead meal prep—and it gives you room to customize with butter, fresh herbs, or a sprinkle of spice.

Ingredients

2-4 servings:

1 pound sweet potatoes

2 tablespoon salted butter

2 tablespoons maple syrup

Optional:

Flaky salt, to personal taste

Instructions

Step 1

Peel sweet potatoes and cut into 1” thick slices.

Step 2

Place sweet potatoes in a single layer inside vacuum seal bags.

Step 3

Vacuum seal sweet potatoes and then place the bag on a baking sheet pan. Place sheet pan in middle oven rack.

Step 4

Set oven mode to Air Sous Vide. Set temperature to 200°F.

Step 5

Air sous vide for 120 minutes.

Step 6

Step 7

Remove sweet potatoes from the bag.

Step 8

Heat a skillet on medium-high heat. Melt butter in the pan and then place cooked sweet potatoes flat side down.

Step 9

Drizzle maple syrup evenly over sweet potatoes.

Step 10

Sear each side for about 1 minute then flip and sear other side.

Step 11

Add additional salt or maple syrup if desired. Serve warm.
