Air Fryer Cauliflower Parmesan

A vegetarian version of the classic chicken parmesan using thick slices of cauliflower. Delicious and a fantastic meatless entree with healthy cauliflower. You won’t miss the meat!

Serves 3-4

Ingredients
1 head cauliflower (about 2 lbs.-910g)

Marinade Ingredients
1/4 cup olive oil
1 Tablespoon Worcestershire sauce
3 cloves garlic , minced or 1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon red pepper flakes
1/2 teaspoon salt , or to taste
black pepper , to taste

Topping/Serving Ingredients
1/4 cup fresh grated parmesan cheese , or to taste
1/4 cup grated mozzarella cheese
1/2 cup marinara sauce
1/2 cup minced parsley
2 cups arugula or chopped lettuce
(Optional) Lemon wedges for serving

Directions

1. Preheat oven to 425°F on Air Fry Mode.

2. Lay parchment or foil on baking sheet and spray with olive oil.

3. Cut stem of cauliflower flush with the bottom of the cauliflower. Remove any excess green leaves. Cut through the center of the cauliflower then cut each half into about 3/4” thick slices. Outer part of cauliflower will fall apart into smaller pieces. Just gather them in a circle and air fry as smaller pieces.

4. Make the marinade: in bowl combine olive oil, Worcestershire, garlic, onion powder, red pepper flakes, salt, and pepper.

5. Lay steaks on prepared baking sheet. Brush marinade on both sides of the cauliflower steaks and over the smaller loose florets.

6. Combine parmesan cheese and mozzarella cheese in bowl. Set aside.

7. Air Fry cauliflower at 425°F for 15 minutes then flip. Add about 1-2 tablespoons marinara sauce over each slice of cauliflower and top with cheese mixture.

8. Air Fry for additional 5 minutes or until cheese is melted and sauce is warmed.

9. Top with chopped parsley and serve on bed of lettuce greens or serve the cauliflower in a sandwich. Serve with optional lemon wedges.
