What Pans Should I Use with My Steam Oven?
The ovenware must be heat and steam-resistant. Steam pans for your oven can be purchased in the Thermador Accessories Store.
Steam Oven Cooking Modes and Controls
Below is a list of cooking modes Thermador steam ovens have.Some of the modes only apply to select models. Please refer to your owner's manual to learn if your oven has these modes and how to activate them. If you do not have your owner's manual, you can download it here.
• Steam - Use this mode to steam vegetables, fish, and other dishes. It helps preserve the nutrients, texture, and taste of your dish.
• Reheat - Use your steam oven to reheat the food. The inflow of steam helps keep the food moist and brings back the original flavor, texture, and crispness.
• Defrost - This mode defrosts food for cooking or serving.
• Slow Cook - Use this mode to slow roast all types of meats.
• Proof - Use this mode to proof bread dough. Steam and convection modes are combined to keep the surface of rising bread dough from drying out while the dough rises much faster than at room temperature.
• True Convection - This mode operates as a convection oven and does not use steam. It produces heat distribution. We recommend using this for baked goods such as cakes, cookies, and tarts.
• Steam Convection - This mode combines the convection and steam function of the oven. It is ideal to cook meats, soufflés, and custards.
• Steam Programs - Automatically program the cooking of many different dishes with the Steam Programs. You can select a variety of programs such as Vegetables, Poultry, Lamb, Breads, Cereal and Grains, and many others.
Steam Oven Tips
Here are some useful tips for your steam oven:
• Always place the pans in the center of the rack.
• Always distribute the food evenly in the pan. If the food is placed unevenly in the pan, it will cook unevenly.
• Do not layer delicate foods too high in the pan or your food may be cooked unevenly. We recommend distributing delicate foods in multiple pans so the food will cook evenly.

Steam Programs
Select Thermador ovens come with Steam Programs. Refer to your owner's manual to learn if your oven has this feature and how to activate the programs. If you don't have your owner's manual, click here.
With Steam Programs, your steam oven automatically sets the oven to cook different foods. You can select a variety of programs such as Vegetables, Poultry, Lamb, Breads, Cereal, and Grains, and more.
Refer to your owner's manual for specific tips and instructions about each program.
Warming Drawer
Keeping Food Warm: It is okay to leave food in the cookware it was prepared in. You can also transfer food to a heat-safe serving dish before placing it in the warming drawer. Aluminum foil may be used to cover food.
Crisping Stale Items: Place food in low-sided dishes, set heat level to LOW.
Use ONLY heat-safe dishes in the warming drawer. The warming drawer will keep hot, cooked foods at serving temperature. Always start with hot food. DO NOT use the warming drawer to heat cold food other than crisping crackers, chips, and dry cereal or warming dishes or plates.
