Chocolate Almond Financier with dried cherry grand marnier sauce



For the Financier:
3 ½ ounces almond flour
3 ½ ounces all-purpose flour
7 ounces egg white
1 cup butter (brown)
9 ounces confectioners’ sugar
1 tsp. orange zest

For the sauce:

1 cup dried cherries
½ cup grand marnier
½ cup sugar
2 oranges juice & zest
½ cup water

1. For the financier, combine all dry ingredients in large mixer with paddle attachment. Slowly add egg whites on low speed until combined. Add room temperature brown butter & orange zest. Bake on extra low heat on stovetop for 25 minutes or in oven at 375 degrees.
2. For the dried cherry Grand Marnier sauce, place orange juice, water, zest and dried cherries in sauce pot. Bring to boil and let simmer for 15 minutes. Place sugar in another sauce pot and allow it to lightly caramelize. Then add Grand Marnier. Combine with cherries and let reduce until syrup consistency.
