A tasty roast, that is good enough for company and great for the family.
Ingredients: 1 tablespoon butter, softened 2 to 3 cloves garlic, minced 1 teaspoon Worcestershire sauce 1 teaspoon dried oregano 1 teaspoon dry mustard 1/2 teaspoon salt 1/8 teaspoon black pepper 2 to 3 pound boneless sirloin tip or top round roast 2 large onions, cut into 1/4-inch thick rings 3 tablespoons butter, melted 1 tablespoon sugar In a small bowl, mix softened butter, garlic, Worcestershire sauce, oregano, dry mustard, salt and pepper into a paste. Rub paste onto all surfaces of the meat; set aside. Toss onion rings, melted butter and sugar together. Line a 15x10x1-inch pan with foil; mound seasoned onion rings in center and place roast on top. Cook in a non-preheated oven at 325°F for 30 to 35 minutes per pound (approximate cooking time: 1 to 1 1/2 hours) or until meat reaches desired doneness: 140°F for rare, 155°F for medium, 160°F for well done. Remove meat from oven; cover with foil. Let roast stand 15 minutes before carving; slice and serve with the onions. Makes 6 to 8 servings.
