Espresso Mini S'more Cookies

My friend made S'more cookies and we ate them over coffee. I thought, why not add espresso to the mix. Then you can take your cookies everywhere and still have coffee.


1 Cup ground graham cracker crumbs
1 1/4 Cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 Cup unsalted butter, at room temperature
1/2 Cup Brown sugar
1/3 Cup sugar
1 large egg
1 teaspoon vanilla extract
1 Tablespoons coffee
1 cup mini-chocolate chips (milk chocolate)
1/2 Cut Jet-puffed vanilla mallow bites


1.  preheat oven to 350 degrees F.
2.  In large blow, mix together graham cracker crumbs, flour, baking soda and salt. Set aside.
3.  In a Large bowl, mix the butter and sugars together until creamy and smooth, about 3-5 minutes. Add in the egg, vanilla extract and coffee and mix until combined. Slowly add the dry ingredients and mix until just combined.
4.  Stir in the mallow bites and chocolate chips. 
5.  Place the cookie dough from tablespoon onto baking sheet, about 1 inch apart. Bake for 6-8 minutes or until the cookies are set.  cool on the baking sheet for 2 minutes and transfer to a wire cooling rack....Enjoy
