Aunty Grace's Pumpkin Squares

Grace's secret family recipe. The secret is the bourbon vanilla extract. Always a winner during Thanksgiving and Christmas get-togethers! Grace would like to share it with the world. Very simple to make and always a crowd pleaser! 


Ingredients:
4 organic eggs
1 cup oil
1 ¾ cup organic sugar
1 tsp. bourbon vanilla extract
16 oz. organic canned pumpkin
2 cups sifted unbleached All-Purpose flour
3 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda

Combine eggs, sugar, vanilla, and oil until light and fluffy. Add pumpkin and mix well. Combine the dry ingredients and add to the pumpkin mixture until batter is smooth. Spread batter into a greased 13 by 10-inch baking pan. Bake for 30 minutes at 350 degrees. Let cool completely before frosting. Cut into bars.


Cream Cheese Frosting:
8 oz. cream cheese
½ cup soft butter
1 tsp. bourbon vanilla extract
2 cups organic powdered sugar

Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix till fluffy. Spread on cooled pumpkin squares.
