Celery Casserole

Not what you would expect, huh? This is a fantastic dish to make around the holidays as Cheryl always seems have extra celery on hand after making stuffing and fixing bloody marys. This is so simple yet so delicious. She guarantees you will be asked for this recipe! We all need a quick run-to casserole during the holidays. Our time with family is precious and this recipe will allow you to spend more time visiting and less time fussing over your meal. A sure crowd pleaser!


Ingredients:
4 C sliced celery stalks
8 oz can diced water chesnuts, drained
1 can cream of celery soup
1 C red pepper, diced
2 T butter
2.25 oz sliced almonds
2 C chow mein noodles
1 tsp salt
1 tsp pepper

Boil celery and red pepper for 7-8 minutes and drain. In a large bowl combine celery, red peppers, soup, salt and pepper. Melt butter in a saucepan and remove from heat. Add almonds and chow mein noodles and stir. Put celery mix into a casserole dish and top with noodles. Bake covered for 25 minutes at 350 degrees.  Uncover for another 5 minutes.
