Jason didn't want to serve the usual huge turkey for the holdiays, so he chose a whole chicken instead. But what makes this roast chicken different is deboning the entire chicken, filling it with stuffing, then slow roasting it at very low temp. For 4 hrs. The meat is incredibly juicy, flavorful, and tender.


Ingredients:
1 whole young chicken (deboned)
garlic confit and oil
Unsalted butter (melted)
salt + pepper
Ham
3 carrots

First, debone entire chicken.
Stuff with ham and seasoning.
Brush chicken with melted butter & garlic confit.
Roast at 180 F. until done, internal temp. reads 160 F.
Let rest before serving.
