Apple Cranberry Crunch

Gretchen's children, ages 3 and 17 months, are both completely obsessed with cranberries. So she came up with this crunch recipe as a reasonably cheap way to make a delicious dessert. Both kids love it! (Although it might just be because she garnishes it with vanilla ice cream or freshly-whipped cream!)


For the filling:
1 cup sugar
1 cup fresh cranberries, rinsed and drained with soft ones discarded
1 tbsp. cinnamon
1/4 tsp. nutmeg
6 large or 8 small apples (I use Granny Smiths), peeled, cored, and sliced

For the crunch topping:
1 cup flour
1/2 cup butter, melted
1 cup rolled oats
1/2 cup sugar
1/2 cup pecans, chopped
1/2 tsp. cinnamon
1/2 tsp. salt

Pre-heat oven to 350 degrees. Begin melting butter while you peel, core, and slice the apples. In a large bowl, mix cranberries, sugar, cinnamon, and nutmeg with apple slices, turning until coated. In a medium bowl, combine all topping ingredients with melted butter and stir until dry ingredients are wet. Turn apple mixture into a 2.5 quart casserole pan and spread crunch topping evenly on top. Bake 45 minutes to an hour, until crunch topping has browned and apples are soft when speared with a fork. Serve with ice cream or whipped cream for extra special deliciousness!
