Plum Pie with Crumble Topping

Delicious pie made with plums and a decadent crumble topping! Claire came up with this because she wanted a more unique pie for the holidays that didn't have the same apple or cherry. She chose it for the contest because it's one of her new favorites, it's absolutely delicious (and pretty) and is so easy to make at home!


For the pie:
4 cups sliced plums
1 tablespoon honey
1/2 cup sugar
1/2 teaspoon lemon juice
1/4 cup all-purpose flour
Dash of salt
1 teaspoon cinnamon
1 (8 ounce) pie crust

For the topping:
1/2 cup brown sugar
1/2 cup all-purpose flour
Dash of cinnamon
4 tablespoons cold butter

Place plums in a large mixing bowl. Add sugar, honey, lemon juice, flour, salt and cinnamon. Stir to coat. 
Grease a pie dish with nonstick cooking spray. Carefully press the pie crust into the dish, making sure the sides are covered. Pour plum mixture into the pie crust.

To prepare topping, mix sugar, flour and cinnamon together with a fork. Using a pastry knife cut in butter until mixture appears crumbly like coarse sand. Sprinkle mixture evenly over the plum filling.
Preheat oven to 375 degrees F.

Bake pie for about 40 to 45 minutes, or until topping is golden brown and filling is oozing.
