Lady M's Luscious Lemon Pound Cake

This is a recipe I made in class and got an A+ on it. I have made this for several people. They love the lemony taste of my cake and the texture because it's really moist with the glaze also inside of the cake.

Servings-12 regular slices

1 cup soft room temperature butter
3 cup regular sugar
6 large room temperature eggs
5 Tbsp lemon juice
2 Tbsp grated lemon peel
3 cup all purpose flour
1/2 tsp baking soda
1/4 tsp kosher salt
1 1/4 cup room temperature sour cream
2 tsp lemon extract


2 cup powdered sugar
6 Tbsp lemon juice
1 Tbsp grated lemon peel

In a Large bowl, cream the butter and sugar until fluffy–about 5 minutes. Add one egg at a time, beat after each egg.  Stir in lemon juice, lemon peel and lemon extract with a rubber spatula. in another bowl, mix flour, baking soda and kosher salt and with the sour cream, add to cream mixture starting and ending with the flour mixture and beat till combined.

Pour into a 10 inch greased fluted pan and bake at 350 degrees F for 60 minutes, rotating after 30 minutes of baking time. Use toothpick or cake tester near center comes out clean. While cake is baking, make glaze and when cake is done baking use wooden spoon handle and poke holes in cake and pour some of the glaze in the holes and let cake cool 10 minutes.  Use cake board and put on top of cake and turn upside down to get cake out of pan. With the cake tester or toothpick, poke more holes in cake and pour rest of the glaze on top of cake and just let in run down the sides and in the middle of cake and let it set at room temperature or you can store it in the refrigerator.
You can use lemon peel curls as a garnish..ENJOY!!!!!
