From the Thermador and Tastespotting Ultimate Recipe Contest Submitted by: Jamie Tomkins
This is a family recipe for Persimmon Cookies that Jamie's Nan (Grandma) brought over from Wales.
½ cup butter
1 cup sugar
2 cup flour
1 cup persimmon pulp
1 cup raisins
1 cup nuts
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 tsp clove
1 tsp cinnamon
1 tsp nutmeg
Combine butter, sugar, egg and mashed persimmon pulp and mix well.
In separate bowl, combine the other ingredients, you could add dates (if desired).
Mix everything together really good.
Bake at 350° for 10-12 min or until bottom is nice and brown.
