Uncle Chester's Blue Cheese Toasts

America has a world-class blue-veined cheese in Newton, Iowa’s Maytag blue. Uncle Chester may be long gone, but his legacy lives on in this old family recipe. Jim says that these bite-size appetizers are great for a cocktail party. The recipe doubles or triples easily if you’re having a crowd.

Makes 16


4 slices whole grain or whole wheat bread
4 ounces Maytag blue cheese or other blue
   cheese, finely crumbled
¼ cup mayonnaise
2 tablespoons minced fresh chives
Pinch of cayenne pepper


Preheat oven to 400°F. Using 1- to 2-inch cookie
cutter, cut 4 rounds from each slice of bread.
Combine next 4 ingredients in bowl. Using fork,
mix just to blend. Divide mixture among 16 rounds,
spreading evenly. Arrange on baking sheet and
bake until golden brown, about 15 minutes.
Serve immediately.

Serve with dry sparkling wine, such as Champagne, Cava,
or Prosecco.
