Ohio is known for its pork, and Johnny Appleseed made his way through the state planting apple trees. The versatile sour cream-mayonnaise sauce is flavored with mustard, cilantro, and chipotle hot sauce.

Makes 4
Burgers
1 pound ground pork
½ cup finely diced peeled apple
¼ cup finely diced onion
2 tablespoons chopped fresh parsley
1½ teaspoons ground cumin
1½ teaspoons paprika
1½ teaspoons chili powder
1 teaspoon salt
1 teaspoon grated lemon peel
2 tablespoons (¼ stick) butter
Sauce
¼ cup sour cream
¼ cup mayonnaise
2 tablespoons stone-ground mustard
1 tablespoon minced fresh cilantro
1 teaspoon chipotle hot sauce
Freshly ground black pepper
Relish
1½ cups finely diced peeled apple
2 tablespoons fresh lemon juice
1½ tablespoons olive oil
1½ teaspoons stone-ground mustard
1½ teaspoons sugar
½ teaspoon coarse salt
⅛ teaspoon paprika
Assembly
4 kaiser rolls, split, toasted
Cilantro leaves, fresh baby spinach leaves, or
arugula leaves (optional)
For burgers: Preheat oven to 350°F. Combine first
9 ingredients in large bowl. Shape into four 4-inch
patties. Place butter in 13x9-inch baking dish. Melt
butter in oven. Add patties to dish. Bake 15 minutes.
For sauce: Combine all ingredients in small bowl
and stir well. (Can be prepared 3 days ahead. Cover
and refrigerate.)
For relish: Combine all ingredients in medium bowl
and stir well. (Can be prepared 8 hours ahead.
Cover and refrigerate.)
To assemble: Spread both halves of each roll with
sauce. Top four halves with burgers. Spoon relish
over burgers. Cover with cilantro, spinach, or arugula
if desired. Top with remaining roll halves. Serve.
Serve with beer or red wine, such as Zinfandel or Syrah.
