Peach Crisp

Filling

4 oz butter                       
4 oz flour                   
Peach syrup or water
1 cup sugar
1 lb fresh or canned peaches

   

Topping

Zest of 1 lemon               
1½ cups brown sugar           
1 cup oatmeal               
½ cup coconut               
½ cup chopped nuts           
2/3 cup melted butter
½ cup flour
¼ tsp salt, baking powder and soda
dash nutmeg

Preheat the oven to 375º Convection.

To make the filling, melt the butter and add flour and sugar. Mix well. Gently stir in the fruit.

To make the topping, combine all ingredients in a bowl and mix well.

In oven-proof dishes, place fruit equally and distribute the topping mixture. Bake until crisps are golden brown.

Remove from oven and serve with vanilla ice cream or whipped cream.
