Green Onion Vinaigrette
With Mixed Greens

Mixed Greens or Greens of choice
Juice of 2 limes               
1 Tbsp fresh thyme leaves           
2 Tbsp chopped mint leaves       
½ cup olive oil
Salt and pepper to taste
Salad greens of choice


Juice the limes and pour the juice into a blender container; add thyme and mint leaves. With the lid on and the machine running, drizzle in the olive oil to emulsify the dressing. Season to taste with salt and pepper.

Serve over or tossed with salad greens of your choice. (Very pretty served with a nasturtium or pansy blossom garnish.)
