Beer-Battered Onion Rings

3 Vidalia or Texas Sweet onions,
sliced ½" thick
2 cups buttermilk
1 cup sour cream
1 cup mayonnaise
1 Tbsp lime juice
1 Tbsp granulated garlic
¼ cup white wine
1 Tbsp garlic, minced
1-2 qt vegetable oil
2 cups all-purpose flour
16-oz beer, medium bodied
Salt and pepper
Separate the sliced onions into individual rings and soak them in the buttermilk for at least 30 minutes.
In a food processor combine together the sour cream, mayonnaise, lime juice, white wine and minced garlic to make a dipping sauce.
Using the Sensor Dome™, heat the oil choosing Program 9.
In one bowl, mix 1 cup of flour with the beer to make a smooth batter. In a second bowl, stir into the other cup of flour the salt, pepper and granulated garlic.
Remove some of the onion rings from the buttermilk and drain slightly; dredge in the flour mixture then in the beer batter and then right into the hot oil. Cook until golden brown and set aside on paper towels to drain.
