Ultimate Sugar Cookies


3 dozen

1 cup all purpose flour           
1 cup whole wheat flour           
½ tsp salt                   
1 cup sugar
½ cup butter                   
1 egg
1 tsp vanilla
1 Tbsp milk or cream
Frosting

In a medium bowl, stir together the flour, baking powder and salt. In the large bowl of an electric mixer cream the sugar and butter until smooth. Beat in egg until well incorporated. Stir in vanilla and milk or cream. Gradually add flour mixture and mix until dough is firm enough to handle. Wrap in plastic wrap and refrigerate for 1 hour.

Preheat the oven to 350º Convection. On a lightly floured surface, roll dough out to ¼-inch thickness. Cut out desired shapes and place about 2 inches apart on cookie sheets. Bake for 8 to 10 minutes or until lightly browned. Transfer to rack to cool, then frost.

Frosting:
2 Tbsp butter, melted       
1½ cup powdered sugar       
3 Tbsp. lemon juice
1 tsp. lemon zest
Optional yellow food coloring

Beat the butter, powdered sugar juice and zest together until smooth and spreadable. Spread frosting over cooled cookies.
