Jim, a banker who loves to entertain in his country house, makes these to serve arriving dinner guests. He's famous among his friends for the farmer-market-fresh feasts he creates from the recipes in his extensive collection of vintage cookbooks.

America has a world-class blue-veined cheese in Newton, Iowa's Maytag blue. Uncle Chester may be long
gone, but his legacy lives on in this old family recipe. Jim says that these bite-sized appetizers are great for a cocktail
party. The recipe doubles or triples easily if you're having a crowd. |

4 slices whole grain or whole wheat bread
4 ounces Maytag blue cheese, finely crumbled
|
¼ cup mayonnaise
2 tablespoons minced fresh chives
Pinch of cayenne pepper
|

Makes sixteen 1- to 2-inch rounds
|
|
|

Preheat oven to 400° F. Using 1- to 2-inch cookie
cutter, cut 4 rounds from each slice of bread.
Combine next 4 ingredients in bowl. Using fork,
mix just to blend. Divide mixture among 16 rounds,
spreading evenly. Arrange on baking sheet and bake until |
golden brown, about 15 minutes.
Serve immediately. |
Serve with dry sparkling wine, such as Champagne, Cava or Prosecco. |
