Recipe: Blueberry Pancakes

Dinner gets all the love in the Valentine’s Day meal rotation.

But to truly wine and dine your date, polishing up on your breakfast skills is a must. You never know when you might need to whip up an impromptu breakfast.

Luckily, for you ladies and gents, today I’m sharing my blueberry pancakes recipe as a prelude to Valentine’s Day.

Blueberry Pancakes

24-30 Pancakes

 1½ cups all-purpose flour                            

4 eggs

1½ cups whole wheat flour                         

¼ cup canola oil

¼ cup sugar                                                       

2 Tbsp Rumford’s baking powder

1 tsp salt                                                 

2 cups fresh blueberries

3 cups milk                                                         

In a large bowl, mix the flours, sugar and salt. Add the milk, eggs, and canola oil and mix well.  Batter should be smooth, not too thick.  Add baking powder and whisk well.  Do not stir again.  Gently ladle batter from the bowl onto a hot griddle.  Sprinkle on fresh blueberries and cook until pancakes bubble, then turn over.
