A few months ago, to kick off the fall, I shared with you my signature crème brûlée recipe. Yes, it’s awesome, and yes, this time of year it can be used as a perfect Thanksgiving alternative dessert to your traditional pumpkin or pecan pies.

But the secret to a perfect crème brûlée lies not in the ingredients, preparation or star-shaped ramekins (well, maybe); but rather, in the flame.

As in, do you know how to wield a blow torch? Without burning your fingers? Without burning your house down? OK, most of you do.
